By balancing the ratio of mentaiko to mayonnaise at 1:1, we achieved a refined taste where the presence and spiciness of mentaiko are distinctly felt. In addition to cheese cream, we incorporated diced cream cheese and added salted kelp, which pairs perfectly with both mentaiko and cheese, creating a uniquely Japanese flavor profile.
