KAI's popular brand "Sekisuiroku" has, for over 40 years since its launch, offered a wide range of knives and kitchen tools renowned for their sharpness, and now boasts a lineup of more than 1,200 products. The knives embody the spirit of sword-making from Seki, Mino Province (present-day Seki City, Gifu Prefecture), where numerous master swordsmiths lived since the Kamakura period, carrying that tradition of exceptional sharpness into the modern era.

The newly launched "Sekisuiroku Shirogane" is an all-stainless steel knife with no joints, making it resistant to dirt buildup and easy to maintain. Demand for all-stainless knives has been growing in recent years, driven by increasing consumer demand for knives that are easy to clean and hygienic to use.*2

The "Sekisuiroku Shirogane" series includes five models: Petty, Small Santoku, Santoku, and two sizes of Gyuto. The blade features an etched pattern inspired by the "fire sparks" (hi-no-ko) that fly during Japanese sword forging,*3 achieving a design that blends traditional beauty with practicality.
