Sant'Or Santameriana (White) Amphora-Aging Skin-Contact
A 100% Santameriana grape, a rare variety from the Sant'Or winery in the Peloponnese peninsula, Greece. This orange wine has refreshing aromas of bergamot, orange, and white pepper, with a fine tannin, minerality, and a balanced soft acidity.
Ramnista (Red)
A 100% Xinomavro, an indigenous grape, red wine from the prestigious Kir-Yianni estate in the Naoussa region of Northern Greece. It is an elegant, full-bodied wine with complex aromas of plum, black olive, and spice, harmonized with firm acidity and tannins, and has received high international acclaim.
■ Comment from Executive Chef Masayuki Eiiwa
For this gastronomic event, we have prepared dishes with a focus on local "food." We have prepared dishes that are particular to the local area, such as Sonogin salmon from Higashisonogi, bouillabaisse finished with Choko miso, and Nagasaki Wagyu filet en croûte (Wellington). It is a collaboration with Greek wines that have a mineral acidity and strong character. We will serve each dish with the passion of the producers who have lovingly cultivated the ingredients in Nagasaki.
