We developed this product with the desire to add a spring-like seasonal touch to the popular "Crispy Umashio Chicken," which has been well-received as a limited-time spring menu item.

"Lemon-Scented Crispy Umashio Chicken" was completed over approximately one year, based on the concept of "chicken that can be enjoyed refreshingly." We particularly focused on the lemon flavor, which is key to the taste. Initially, we considered a "grown-up" flavor with stronger bitterness, but to make it enjoyable for a wider range of customers, we aimed for a light and fresh taste.

On the other hand, we struggled to bring out the natural aroma of lemon. We adopted lemon peel and, through repeated trials, carefully adjusted the balance with freshness to add depth to the flavor.
