New Summer Cuisine at Sillage

Located near Shirokane-Takanawa Station, 'Sillage' is a modern French restaurant that opened in October 2025. The name means 'lingering fragrance' in French, embodying the concept of creating lasting culinary memories.

Chef Kazuki Munesada, who trained at a Michelin-starred restaurant in Southern France and other establishments, blends solid French technical foundations with Japanese ingredients and the essence of fermentation. His dishes highlight the unique qualities of the ingredients, offering changes in aroma, taste, and temperature.

This summer menu focuses on the characteristics of seasonal fruits, summer vegetables, and seafood, with themes of 'lightness' and 'depth.' By subtly layering fermentation and spice nuances, the courses are designed to be refreshing and comforting even in hot weather.
