Yumura Onsen is located in Shinonsen Town, the Tajima region of northern Hyogo Prefecture, a hot spring resort surrounded by mountains and rich in natural beauty. Facing the Sea of Japan, Shinonsen Town offers abundant seasonal seafood, freshly harvested vegetables, and high-quality San'in rice grown in fertile soil.

At Yusen no Yado Yuamu, we have prepared a special plan allowing guests to savor the finest summer ingredients: white squid sashimi, abalone, Tajima beef, and Tajima chicken.

White Squid Sashimi

Among squid varieties, the highest-grade “kensaki-ika” (swordtip squid) is known as “shiro-ika” (white squid) in the San'in region.

Its beautiful white flesh has a firm, chewy texture. Enjoyed as “sashimi presentation,” it allows guests to appreciate both its natural flavor and elegant appearance.

Abalone

Abalone is served grilled with liver sauce.

The abalone is slowly steamed to tenderize it, then topped with a smooth sauce made from pureed abalone liver, soy sauce, and fresh cream for a rich, mellow finish.

Tajima Beef

Tajima Beef Sukiyaki

Tajima beef is a premium black-haired Japanese cattle breed raised in Hyogo Prefecture. For generations, Tajima cattle have been carefully bred without crossbreeding with cattle from other prefectures, preserving their pure bloodline. Known for low subcutaneous fat and high-quality muscle fibers, Tajima beef is prized for the perfect balance of lean meat and marbling.

Tajima beef will be served as sukiyaki.
