Jōhanke, a jikokumushi restaurant inside Hyotan Onsen in Beppu, has launched a new spring-limited menu. The core offering is the "Okubungo Pork and Spring Vegetables Spring Seiro," featuring tender, sweet brand pork and seasonal vegetables, with flavors enhanced by steaming. Other new spring dishes include Sawara and bamboo shoot sakura-mushi, and steamed stewed pork. The cooking method, jikokumushi, uses hot spring steam for rapid cooking without water or oil, preserving the ingredients' natural flavors. Hyotan Onsen, founded in the Taisho era (100 years ago), boasts a 100% natural, free-flowing hot spring.
