From Australia, he is the 5th generation owner of a vineyard that has existed for over 100 years. After studying enology at university, he honed his skills at renowned wineries. He later moved to Japan, working as an instructor at the prestigious wine school "Académie du Vin," as well as active in consulting and wine production. He is a specialist deeply knowledgeable not only about wine but also about the Japanese, Asian, and global market situations.

After graduating from culinary school, he spent approximately 25 years at Palace Hotel Tokyo, adjacent to the Imperial Palace, working in French, banquet, and teppanyaki departments. During his tenure, he also gained experience working at a teppanyaki restaurant in Frankfurt. He joined Hyatt Centric Kanazawa and Hyatt House Kanazawa as a founding member in 2020. Since then, he has overseen the culinary departments of both hotels, including FIVE – Grill & Lounge and banquets, and was appointed Executive Chef in April 2026.
