Enjoy the rich umami of large trout with hot Dutch baby pancakes
This appetizer features large trout tartare served with Dutch baby pancakes baked crispy in the oven. We have combined persimmon pickles, capers, and shallots to create a vibrant dish. The mellow sweetness of the persimmon and the refreshing acidity of the wine vinegar enhance the rich umami of the large trout. We have added a vibrant "Rouge Sour Cream" made with red wine and beets to create an elegant dish that heightens the anticipation for dinner.
Soup "Game and Mushroom Pot Stew"
Pot stew with four kinds of mushrooms including truffle
This pot stew combines a consomme soup that concentrates the robust umami of game with four kinds of mushrooms (truffle, matsutake, enokitake, and shiitake). We have also added ham made from deer with a deep umami flavor and watercress. The moment you open the lid, the rich aroma of the mushrooms and the strong aroma of the game consomme spread with the steam.

This rustic dish features wagyu and venison skewers grilled in front of you with pine needles and hinoki cypress, wrapped in the aroma of smoke. For the side dishes, we have prepared eggplant, taro, and lotus root with a rich and deep foie gras mountain pepper miso, grilled with fragrant persimmon leaves. Enjoy the deep umami of the meat with three kinds of sauces: wasabi, cassis mustard, and a steak sauce with a hint of sweetness.

A luxurious dish featuring chantilly cream and grapes, with the aroma of Hakushu whisky
Based on the traditional confection "Baba" soaked in a syrup with alcohol, we have created this dish inspired by the harvest festival of Yamanashi. We have used chantilly cream and grapes in abundance, and this dish is infused with the aroma of Hakushu whisky. The fruity aroma and a hint of smokiness add a lingering aftertaste to this light yet profound dessert, which concludes the forest dinner.
