This summer, the menu features a total of 8 dishes, including a warm appetizer inspired by Aomori's local dish "Ichigo-ni" (sea urchin and abalone soup), showcasing seasonal sea urchin and abalone, and a small appetizer combining Aomori's signature scallops with vibrant green bell peppers for a summery touch. This course elevates the region's culinary heritage and summer flavors using French culinary techniques.
