The resort is located in an area with sprawling agricultural landscapes and a thriving dairy industry. ■ Cold Appetizer 'Pinzimonio from the Farm'

A cold appetizer of vegetables from the on-site farm. A dish that lavishly incorporates the blessings of Nasu, 'Pinzimonio from the Farm.' On a black plate fired by Mr. Koichi Onozawa, a ceramic artist associated with Nasu, seasonal vegetables harvested from the resort's farm 'Agri-Garden' and grown in the Nasu region are arranged, allowing you to feel the bounty at a glance. Furthermore, cheese and Yashio-masu trout, which are actively produced in Nasu, are also added, condensing the charm of the region. The stick vegetables in the glass container can be picked up by hand, enjoying their fresh taste with bagna fredda, as if harvesting in a farm.

■ Pasta 'Fedelini with Young Ayu and Cucumber'

A pasta combining the slightly bitter young ayu and fresh cucumber. This pasta features the delicate texture of fedelini pasta with a refreshing cucumber sauce. In addition, you can enjoy it with two other sauces: a cucumber and genovese sauce, and a sauce using 'uruka' (*1). The pasta is topped with crispy, ultra-thin noodles and fried young ayu, allowing you to enjoy various textures at the same time.

Roasted beef with smoked cheese wrapped in a zucchini flower. The main course is 'Beef Arrosto.' It is served with medium-rare roasted beef, accompanied by fried zucchini flowers and potatoes. Scamorza affumicata (*2) is wrapped inside the zucchini flower bud, allowing you to enjoy the flavor of smoked cheese. It is a dish to be savored with a sauce made from black olives and pickled shiso.
