Dekopon Citrus and Financier Tart with Ricotta Milk Sorbet
Dekopon Citrus and Financier Tart with Ricotta Milk Sorbet

A dessert that expresses the delicate transition of light and shadow in "Twilight" with the fresh scent of Dekopon citrus and homemade ricotta milk sorbet.
A financier topped with herb-scented browned butter is made into a tart, and Dekopon is layered in various forms such as confit, homemade oil, and powder. Served in a blue vessel reminiscent of a twilight sky, it reflects the emotion of dawn and dusk captured by Shin-hanga, finishing as a dish typical of resonance.

[Reference Information 1] "Twilight, Shin-hanga - From Kobayashi Kiyochika to Kawase Hasui"

The "Famous Places in Tokyo" series, started in 1876 (Meiji 9) by Kobayashi Kiyochika, who is considered one of the last Ukiyo-e artists, brought a major transformation to landscape prints in the Meiji period. The works depicting the expressions of twilight and the appearance of light sparkling in the dark are called "kosen-ga" (light-ray pictures), capturing even the emotion of Edo through deep shadows. Such a perspective overlapped with the sentimentality of people mourning the fading traces of Edo, and the motivation of photography trying to record them, and drew a clear line from the "kaika-e" (enlightenment pictures) in which contemporary Ukiyo-e artists optimistically captured the city undergoing transformation due to civilization and enlightenment with vivid colors.
Shin-hanga, which aimed to revive Ukiyo-e in the late Meiji period, inherited not only its techniques but also the sentiment that Kiyochika and others tried to retain on the screen, discovering new landscapes of Japan. We will trace the flow of landscape prints from Kiyochika to Hiroshi Yoshida, Kawase Hasui, and others through the Muller Collection from the Smithsonian National Museum of Asian Art.

[Reference Information 2] Mitsubishi Ichigokan Museum, Tokyo
Opened in Marunouchi, Tokyo in 2010. A 5-minute walk from JR Tokyo Station.
It holds special exhibitions three times a year on the theme of modern art from the late 19th to early 20th century. The red brick building is a reconstruction of the "Mitsubishi Ichigokan" built by Mitsubishi in 1894 (designed by Josiah Conder). In restoring it, we aimed to restore it as faithfully as possible based on photographs likely taken upon the completion of Mitsubishi Ichigokan in 1894 (Meiji 27), as well as drawings and preserved members. https://mimt.jp/
