Kita no Shokuhin Co., Ltd. (Hokkaido Confect Group, HQ: Zenibako, Otaru, Hokkaido, CEO: Naofumi Tami) will open 'Ryoshi no Nigirimeshi,' a specialty shop for 'fragrant salmon flake winged grilled onigiri & dashi soup,' on Thursday, May 21, 2026. This is the first physical store for 'Ryoshi no Chikara Meshi,' a dashi furikake popular at Hokkaido product exhibitions.

The signature product, 'Ryoshi no Chikara Meshi,' is a dashi furikake made with 'sakebushi' (salmon flakes), said to have over four times the umami of bonito flakes. Since its launch in 1999, it has been sold in all 47 prefectures, primarily at national Hokkaido product exhibitions. It has gained a strong following, especially among repeat customers, and currently sells an average of about 40,000 bags per year (equivalent to about 400,000 bowls of rice). During its peak, buoyed by a nationwide boom in such events, it once recorded sales of 120,000 bags.

At these exhibitions, we received many comments like 'It's delicious on onigiri' and 'I buy it over and over again,' making it a long-selling product representative of Kita no Shokuhin. This new physical store is opening to provide a place where people can experience its deliciousness.

Sakebushi has long been a beloved local food in Hokkaido. This store was born from the desire for not only locals but also tourists visiting Hokkaido to enjoy it casually.

We offer a set of fragrant salmon flake winged grilled onigiri, made with 'Ryoshi no Chikara Meshi' cooked into the rice, and a dashi soup. We focused on 'yaki-onigiri' (grilled onigiri) as the best way to bring out the aroma of the salmon flakes and the soy sauce used to simmer salmon bones. By grilling the surface, it becomes crispy on the outside and fluffy on the inside. With every bite, the rich aroma and umami of the salmon flakes spread through your mouth.

When served, it's topped with extra salmon flakes and green onions. First, enjoy it as is. To finish, put it in the salmon flake dashi soup to enjoy it as a dashi chazuke, with the umami bursting out. A 'winged grilled onigiri' using 'Ryoshi no Chikara Meshi.' Grilling the surface makes it fragrant, bringing out the rich aroma and umami of the salmon flakes, crispy on the outside and fluffy on the inside.

The 'wing' part is also coated with a soy sauce made from simmering salmon bones, which is full of salmon umami, making it even more fragrant and adding to the crispy texture.
