Christophe Pochet, Owner Chef of "Le Bouchon Lyonnais"
Born in Vénissieux, France, he grew up in Lyon and began his culinary journey at the age of 15. He honed his skills at Michelin two-star restaurants such as "GILL" in Rouen, and other renowned establishments in Normandy and Paris. After arriving in Japan in 1998, he worked as a culinary instructor at "Le Cordon Bleu Tokyo" and as Executive Chef at Sofitel Tokyo before opening "Le Bouchon Lyonnais" in Kagurazaka in 2007. He gained high acclaim for his cuisine that fuses authentic Lyonnaise dishes with Japan's four seasons, earning a Michelin star in 2011. He has continued to be featured in the Michelin Guide for 16 consecutive years. He also serves as President of the Association Charcutière Française au Japon (ACFJ) and is dedicated to promoting French culinary culture with the mission of "conveying authentic Lyonnaise cuisine to Japan."
Keiji Tsutsumi, Head Chef of "Jolie Brasserie," Modern French at Waldorf Astoria Osaka
He began his career as a chef in a Japanese kappo restaurant, learning the techniques and spirit of Japanese cuisine. He then transitioned to the world of French cuisine, gaining extensive experience from appetizers to desserts, and also obtained a sommelier qualification. He explores flavors from both culinary and wine perspectives. Seeking further refinement, he traveled to France and experienced authentic culinary culture at a Michelin one-star auberge in Burgundy, honing his skills and sensibility. Upon returning to Japan, he worked as a chef at French restaurants before gaining experience at the all-day dining establishments of the luxury hotel W Osaka. Currently, as Head Chef of "Jolie Brasserie" at Waldorf Astoria Osaka, he pursues "Cuisine Nature," which draws out the inherent charm of ingredients, leveraging his experience cultivated in both Japanese and French culinary cultures. He also holds a sommelier qualification.
