On the occasion of our 5th anniversary, we turned our attention to the 'assembly' itself.
We explored what kind of flow would be appropriate to allow customers to enjoy the appeal of wagyu comfortably and without strain until the very end. In searching for the answer, this burger took shape.
■ Not a revival, but for 'now'
This product is a dish based on the 'Nihonbashi Burger,' which was previously sold, but reconstructed with a modern sensibility.
At the time, it was developed as a collaboration product with Ninben, a long-established store in Nihonbashi, and received great acclaim from many customers. While receiving requests for its revival, we chose to create 'a bite befitting the Nihonbashi of today,' rather than a reproduction of the past.
■ Taste Design
This burger is not a taste that is complete in the first bite.
Bonito flakes, wagyu, sansho pepper. It is designed so that each element is felt as a flow, without being too assertive. Even before it enters your mouth, a hint of Japanese flavor gently rises, as you chew, the umami of wagyu spreads, and finally, the lingering taste of sansho pepper quietly remains. As you eat, you naturally want to take another bite.
This burger was designed with such a flow in mind.
The special Japanese-style sauce is not intended to make the flavor strongly impressive, but rather to serve as a binder for the whole.
