JR Hotel Clement Takamatsu (1-1 Hamanomachi, Takamatsu City, Kagawa Prefecture; General Manager: Kenji Tsutsui) is pleased to announce the hosting of a special lecture event on September 25, 2026 (Friday), in commemoration of its 25th anniversary. The event will feature world-renowned chef Katsuhiko Nakamura, the first Japanese chef to earn a Michelin star in Paris, France, with the theme 'Reducing Food Waste: Our Responsibility.' The date, September 25, coincides with the day the United Nations General Assembly adopted the Sustainable Development Goals (SDGs), making it an ideal occasion to raise awareness about sustainable food practices.
Chef Nakamura trained extensively in Japan before moving to Europe, where he honed his skills at various restaurants across France for 15 years. In 1979, he became the head chef at 'La Cantinade de Gourmet' in Paris, earning a Michelin star—the first Japanese chef to do so. After returning to Japan, he served as Executive Chef and later as Managing Director and Executive Chef at Hotel Edmont's French restaurant 'Fograin.' From 2017 to 2025, he served as Goodwill Ambassador for FAO (Food and Agriculture Organization of the United Nations) in Japan. In 2008, he led the culinary team as Head Chef for the Hokkaido-Toyako Summit held at The Windsor Hotel Toya Resort & Spa. Today, he holds the position of Honorary Chief Culinary Director at Hotel Metropolitan Edmont and other properties under Nihon Hotel Co., Ltd.
This lecture will delve into Chef Nakamura’s decades of experience, exploring his exceptional techniques, creativity, and the evolving role of chefs in today’s world. He will particularly address the next generation of culinary professionals, sharing practical insights on minimizing food waste and discussing the chef’s responsibility in building a sustainable future through food.
From May 1 (Friday) to November 30 (Monday), JR Hotel Clement Takamatsu is running a series of 25th-anniversary initiatives under the theme 'Thank You: Weaving Comfort into the Future,' offering special plans to express gratitude to loyal customers and the local community.
The hotel remains committed to being a beloved destination by continuing to co-create a sustainable future together with the local community.
