This time, 'Kichijoji Jigemonton' will launch 'Goto hand-pulled udon' as a new summer menu item, served in a chilled dipping style. This dish is offered as a refreshing option during the hot summer months when appetite may wane. Goto hand-pulled udon is a traditional noodle dish passed down in the Goto Islands of Nagasaki Prefecture. Regarded as one of Japan's 'Three Great Udon Noodles,' it is characterized by its thin yet smooth, slippery texture and firm, chewy resilience. This time, it will be served with two dipping sauces: 'Golden Agodashi,' a refined broth made from flying fish (tobiuo) caught in nearby Nagasaki waters, and 'Onyoku Kyushu Soy Sauce.'
