The oysters used for the Oyster Shabu-shabu are carefully selected large oysters that can be eaten raw. Because the freshness of these oysters is guaranteed, they have no unpleasant odor, allowing you to fully enjoy their rich umami.

To further enhance the umami of these oysters, we have prepared two types of shabu-shabu broth: Red and Black.

Both are based on a paitan (white chicken bone) soup. The "Red" broth is a Mala (spicy and numbing) style, characterized by its tingling sensation and spiciness. For the finishing dish, after the oysters and vegetables have released their sweetness, we recommend vermicelli noodles, to be enjoyed like a seafood Mala Tang.

The "Black" broth offers a rich and deep flavor with plenty of squid ink. The combination of rich squid ink and oysters, often called "the milk of the sea," is exceptional. For the finishing dish, we recommend adding cheese (550 yen) to the zosui (rice porridge) to enjoy it like a squid ink risotto.
