"Nagasaki Champon Shun", a famous restaurant that disappeared while being mourned by many fans in Yoshizuka, Fukuoka. "Hakata Nabeyaki Champon Shunka" was born in a new form, inheriting its taste and passion.
"Shunka" was created through continuous development with the former owner of "Nagasaki Champon Shun", aiming to create a new champon culture unique to Fukuoka based on the traditional taste.
Following ramen and udon, we propose "Hakata Champon" as Fukuoka's "next noodle culture" and define a new form of a bowl.
The defining feature is a rich yet deep cloudy soup made by luxuriously boiling chicken bones and layering the umami of seafood. This soup, which adds power to the inherited flavor, has a high affinity with Hakata's food culture. By fusing it with the essence of "motsunabe" and "mizutaki", which symbolize Hakata's hot pot culture, we realized a new style of "champon eaten like a hot pot".
Furthermore, "Shunka" incorporates the concept of "shime" (finishing dish), which is the joy of hot pot culture, allowing you to enjoy "kaedama" (extra noodles) or extra rice after the champon. We offer a bowl that provides satisfaction until the very last bite.
Additionally, rich tsukemen (dipping noodles) developed from the inherited soup is another signature menu item of "Shunka".
Although it tastes different from champon, we propose a new way to enjoy it as a bowl where you can feel the same roots.
While continuing the lineage of "Nagasaki Champon Shun", transitioning to a new noodle dish fused with Hakata food culture.
"Hakata Nabeyaki Champon Shunka" will broadcast Fukuoka's new noodle culture, "Hakata Champon".

Rich Cloudy Champon Soup
The core of Shunka's flavor is the rich chicken paitan (white soup) born from prolonged boiling. The ingredients essential for umami are selected after craftsmen repeatedly tested and thoroughly verified the balance of each part. By taking time to boil them slowly, the deep richness and aroma extracted from the core of the bones blend into the soup, resulting in a flavor that is rich yet elegant.
The creamy mouthfeel and natural sweetness born from maximizing the power of the ingredients. It is a masterpiece chicken paitan soup crafted by artisans, spreading a mellow and deep flavor that you will never tire of.
Rich Tsukemen Soup utilizing the inherited soup
The tsukemen soup is finished through a seemingly inefficient process, sparing no effort to perfect the umami. Chicken bones are boiled slowly, and the moment the umami becomes richest is identified. Back fat, carefully selected aromatic vegetables, and homemade simmering sauce are added to layer even deeper richness. Pork is also simmered...
