For this fair, we developed four types of miso soup using Kyoto miso, with the theme of 'refreshingly delicious' to be enjoyed with tonkatsu.
We repeatedly prototyped not only the miso blend and ingredient combinations but also changes in aroma and texture, so please enjoy the new harmony with miso, such as the stickiness of nagaimo (Japanese yam) and okra, and the refreshing aroma of lemon and myoga (Japanese ginger).

For this project, all miso soups use Kyoto miso.
We repeatedly prototyped the blend of four types of miso—red, white, koji, and medium-red—to harmonize with the deliciousness of the ingredients.
