Fukumitsuya Co., Ltd. (Headquarters: Kanazawa City, Ishikawa Prefecture) will launch two new products, "NIRVANA 1990" and "NIRVANA 1992", on Wednesday, April 8, from "Momotose", a rich-matured type of long-aged sake brand whose color, aroma, and taste change greatly by aging according to the temperatures of the four seasons. We propose these to aged sake and wine lovers, the gift market, and overseas markets.
The ultimate ideal, a rich-matured pure rice sake named "Nirvana (Gedatsu)".
It was in 1959 that Fukumitsuya began working on the long-term aging of Japanese sake. It started when the 12th generation head, Hiromu, visited world-renowned wine regions in Europe and was deeply impressed by the cultivation techniques of ingredients nurtured by aging, the brewing technology, and the rich culture. The brand that crystallized by researching the optimal sake rice to receive the great power of time, the best brewing method, and obtaining the know-how to foresee the result of the final long process of storage and aging is the rich-matured type "Momotose" (born in 1994), which is aged according to the temperatures of the four seasons. Together with the light-matured type aged in a low-temperature zone, numerous aged sakes are passed down to the 13th and 14th generations as the brewery's assets.
Product Features
The new products "Momotose NIRVANA 1990/1992" use 100% "Yamada Nishiki", the highest peak of contract-farmed sake rice, and "Hyakunen-sui" (century water) originating from the sacred Mt. Hakusan. Foreseeing decades of aging, we have devised various methods for preparation. These sakes, whose aromas and flavors have changed dramatically due to the blessings of time and the mysteries of nature, are released as the ultimate ideal of Fukumitsuya's rich-matured pure rice sake. We propose them together with food pairings that go beyond the concept of Japanese sake. (Details of each product are as described below)
Naming and Design
"Momotose" is an ancient Japanese Yamato word meaning one hundred years or a long period of time. We named it "Momotose" from the momentum of Fukumitsuya's preparation water taking a hundred years to arrive from the foot of the sacred Mt. Hakusan to spring out of the brewery's well, and from the awakening of the aged sake released from a long sleep. The naming and calligraphy are by Mutsuo Takahashi, a poet who received the Order of Culture in 2024. Following the definition of the Long-term Aged Sake Study Group, the two types of sake that have reached the highest state are praised as "Nirvana (Sanskrit: निर्वाण, nirvāṇa)", and the calligraphy by Mr. Takahashi is placed on hand-made Japanese paper labels.
Target
Japanese sake, aged sake, and wine lovers, the gift market, and overseas markets
