FONZ Co., Ltd. will launch the Chocolat & Haute Pâtisserie brand 'GABRIELE RIVA' in June 2026. Under the philosophy of 'creating world-class products,' FONZ has pursued excellence in cuisine, space, and service. Gabriele Riva, a chef from Milan, Italy, has spent over 40 years mastering traditional techniques and modern approaches. These two have met to begin a new journey from Nagano Prefecture, the roots of FONZ. The brand will be based in Komoro City, where the culture of a castle town remains alive amidst nature's bounty. The grand opening will include a workshop, a cafe named 'GR caffè,' and a shop, all situated in heavy historical buildings. While preserving the historical atmosphere, modern sensibilities will be layered to breathe new life into the space. The workshop will be managed by FONZ, while the cafe will be operated by Sukyu Shoten Co., Ltd. of the Yamabuki Group, a local company in Komoro. This project is part of a public-private collaboration with Komoro City and the Urban Renaissance Agency (UR) to revitalize the city. GABRIELE RIVA will offer innovative sweets using Japanese ingredients, especially Nagano's high-sugar fruits, combined with Italian expertise. Key products include 'Melty Cube' chocolates, truffles with thin shells and deep ganache, gelato focused on direct material flavor, and Panettone made from a mother yeast inherited for over 100 years. Founder Gabriele Riva believes in the beauty and craftsmanship of Japanese ingredients, and the brand aims to provide experiences that remain in people's memories.
