What is Flaming Cheese Pasta?

Cheese Tavern CASCINA's most popular item, the [Flaming Cheese Pasta], is a pasta dish finished inside a block of Italian Pecorino Romano cheese.

We finish the dish right in front of the customer.

We use a whole block of Pecorino Romano, an Italian hard cheese. Before adding the pasta, we heat and melt the cheese.

Once the flambé flame dies down, we add freshly boiled pasta from the kitchen into the cheese at the perfect moment.

We quickly toss it with the cheese to create a rich finish. It is then plated and served.
