(Ota-ku, Tokyo / President and CEO: Ryoju Hirao) will begin offering a total of 9 "seasonal menu" items, available only in July, at 85 "Shoya" restaurants nationwide that feature chefs (excluding some locations). The offering period is limited from July 1, 2026 (Wed) to July 31, 2026 (Fri).

In July, in addition to Shoya's signature fish dishes featuring Isaki (thread-sail filefish), which is at its peak season, and eel, a stamina-boosting ingredient for summer, we will also have a full lineup of nutritious summer vegetables such as bitter melon and gyojana.

With that in mind, this month's menu features 8 dishes prepared by our chefs, focusing on stamina-boosting ingredients. Isaki Sashimi (650 yen)

One of Shoya's three great specialties, sashimi. This month, we are offering "Isaki Sashimi (650 yen)" at the peak of its season. At this time, the fish are rich in fat before spawning, allowing you to enjoy their delicate sweetness and deep umami. It is also rich in high-quality protein, essential for recovery from fatigue, making it a welcome ingredient for summer when energy is easily depleted by the heat. The Isaki are directly delivered to each store from "Yonekawa Suisan," a long-established wholesale fish dealer in Toyosu celebrating its 90th anniversary, ensuring exceptional freshness.

Assorted Eel Skewers (620 yen)

Eel, a summer classic, is offered as an "Assorted Eel Skewers (620 yen)" set, allowing you to enjoy both grilled eel (kabayaki) and grilled eel liver (kimoyaki). The fragrant grilled eel and the slightly bitter grilled liver, packed with concentrated umami, are full of stamina.

Bitter Melon and Spam Champuru (650 yen)

We also focus on summer vegetables. Bitter melon is rich in vitamins C, potassium, and iron, and is a delicious way to get your summer nutrients. We offer "Bitter Melon and Spam Champuru (650 yen)" that brings out its moderate bitterness and umami.

Gyojana Ohitashi (390 yen)

Additionally, "Gyojana Ohitashi (390 yen)" features gyojana, a highly nutritious vegetable created by crossing wild garlic (gyo-nin-niku) and chives, which are stamina-boosting vegetables. Its crisp texture and the aroma characteristic of aromatic vegetables stimulate the appetite.

In addition, we offer a total of 9 items, including "Yanaka Ginger (420 yen)," a traditional Tokyo vegetable long cherished for its health benefits, "Grilled Ayu (800 yen)," "Freshly Picked Edamame (580 yen)," "Cold Simmered Eggplant and Okra (390 yen)," and "Corn Kakiage (480 yen)."

Enjoy refreshing limited-edition sake with summer flavors!

This month, we offer two limited-edition summer sake brands from Niigata Prefecture. Ishimoto Shuzo's "Koshino Kanbai Lagoon Junmai Ginjo (90ml 650 yen)" can be enjoyed on the rocks for a crisp taste or with soda water for a refreshing finish. The rice's umami and clarity, drawn out through careful brewing, pair perfectly with the richness of the "Assorted Eel Skewers." Kikusui Shuzo's "Kikusui Ryofu Honjozo (140ml 800 yen)" is a sake with a good balance of acidity and sweetness, made with yeast that produces a high amount of malic acid, commonly found in white wine. Its refreshing dry finish enhances the sweetness of the "Isaki Sashimi."
