This menu features "Azumino Salmon," raised in the pure water of the Northern Alps by Fujiya Wasabi Farm in Azumino City, Nagano Prefecture. This marks the first time a food chain has offered a menu using this salmon (※).

Background of Adoption

The snowmelt from the Northern Alps emerges as clear spring water in Azumino City, Nagano Prefecture, after 20 to 30 years. At nana's green tea, we use wasabi from Fujiya Wasabi Farm, which is grown in the spring water of Azumino, for our "stem wasabi" offered in our regular menu.
This natural spring water is rich in oxygen and flows continuously 365 days a year with a constant water temperature, creating a stable growth environment suitable for fish farming.
The farm also utilizes this spring water for salmon aquaculture.
"Azumino Salmon" raised in this environment is characterized by its refined fattiness without any gamey odor and its tender texture.
We were impressed by the fact that it is a domestically produced ingredient that aligns with nana's green tea's concept, as well as its refined taste, leading us to adopt it for the first time as a food chain.
