Daybreak Co., Ltd. (Headquarters: Shinagawa-ku, Tokyo; CEO: Masayuki Kinoshita), a company specializing in special freezing solutions, will exhibit at 'SusHi Tech Tokyo 2026' (Dates: April 27–29, 2026; Venue: Tokyo Big Sight), a global conference hosted by the Tokyo Metropolitan Government. This marks our third exhibition. We will offer a variety of frozen sushi crafted by renowned restaurants and unveil our new 'frozen ramen,' currently under development for overseas export. We aim to share the evolution of frozen sushi and the new possibilities for Japanese food exports through freezing technology. SusHi Tech Tokyo is one of Asia's largest global startup events, hosted by the Tokyo Metropolitan Government. It attracts over 700 startups and a total of over 50,000 visitors, focusing on creating future industries and business models through various sessions and networking. Daybreak has exhibited for two consecutive years since the inaugural event in 2024. In 2024, we provided frozen sushi using 'Himi Cold Yellowtail' in collaboration with Toyama Prefecture, which was highly evaluated for its ability to reproduce fresh quality outside of the season and away from the production area, winning the 'SusHi Tech Award' in the Fantastic Startup category. Last year, we served approximately 2,000 pieces of frozen sushi that have already been exported to the US, demonstrating the potential of frozen sushi to both domestic and international visitors. This year, we will exhibit on the business days of April 27 (Mon) and 28 (Tue), presenting different products each day. On the first day, April 27, we will collaborate with companies that have adopted our Artlock Freezer to showcase a variety of frozen sushi. We have positioned 2025 as the 'First Year of Frozen Sushi' and have been promoting market revitalization. This collaboration is an extension of those efforts. On the second day, April 28, we will unveil our new 'frozen ramen' developed for overseas export. This product aims to meet global demand for ramen while helping to resolve labor shortages by simplifying the cooking process. The frozen ramen is developed by combining 'plant-based soup for overseas export' using Fuji Oil's MIRACORE® technology and 'frozen noodles that remain firm and chewy even after freezing' developed by Banraiken Co., Ltd. using the Artlock Freezer. This allows for authentic Japanese ramen to be served overseas simply by thawing in a microwave. Test sales are planned in the US starting this spring to summer. Daybreak aims to solve social issues such as food quality preservation, distribution expansion, and labor shortages through freezing technology, contributing to the development of the food industry and spreading Japanese food culture globally.
