It is driven by a team led by Chef Ryuzo Abe, who runs 'Boulangerie parigot' in Uehonmachi, Tennoji-ku, Osaka, and Koji Nakanishi, an expert baker at Dia. They aim to create 'authentic bread that maximizes the flavor of wheat', aspiring to be the number one bakery in the Kansai region right in the heart of Osaka, 'Umeda', where about 300,000 people pass through daily.
