This parfait is perfect for the fresh green season, featuring the profound bitterness of Uji matcha from Kyoto Prefecture layered with the aroma and acidity of the new variety of pink strawberry, "NADESHIKO DROPS."

At the bottom of the glass, refreshing cinnamon and vanilla jelly is accented with the tartness of cranberries. The middle layer features rich Uji matcha genoise, chewy matcha warabi mochi, and two types of ice cream—matcha, and strawberry & mascarpone—creating a contrast of sweetness and bitterness.

Notably, the parfait features a pairing with the rare pink strawberry "NADESHIKO DROPS" placed at its center. The strong aroma and fleshy texture of the strawberry blend harmoniously with genoise deeply infused with Uji matcha syrup and smooth tiramisu cream.

For the finishing touch, the parfait is vibrantly adorned with carefully handmade matcha macarons and raspberry sherbet, which, when alternated with matcha tiramisu, highlights the unique appeal of each.

"NADESHIKO DROPS" is a new variety of domestically grown strawberry. Its characteristic feature is that it retains a pale pink color even when fully ripe; at first glance, it may appear unripe, but one bite reveals a rich aroma, firm flesh, and concentrated sweetness. Due to its limited market availability, this parfait offers an early opportunity to experience its rare deliciousness.
