The CHOYA Ginza BAR to Launch Limited-Time “Star-Dancing Night Sky Shaved Ice”

CHOYA Umeshu Co., Ltd. will launch the limited-time “Star-Dancing Night Sky Shaved Ice” at its umeshu cocktail specialty bar, The CHOYA Ginza BAR, from May 22 to September 24, 2026. The dessert is inspired by a fantastical blue night sky where stars sparkle and dance in the quiet of the evening. Developed to offer a cooling moment during Japan’s intense summer heat, the shaved ice features a jelly layer made with ripe ume, cranberry, and butterfly pea, topped with a fruit ice layer of butterfly pea and blueberry, plus a hojicha ume milk espuma layer. It is finished with star-shaped ramune candies, ume arare rice crackers, and one frozen ripe Nanko ume. The dessert comes with three original umeshu syrups. When poured over the fruit ice, the colors shift like a starry sky, creating a dreamy effect reminiscent of meteors lighting up the night. Crushing the frozen Nanko ume releases ume extract and adds a strong tart accent. The three syrups are “Ume Lemon,” a refreshing syrup made with Kishu Nanko umeshu and lemon; “Supreme Ume Jelly,” a rich and aromatic syrup made with Kishu fully ripened Nanko ume jelly and puree, finished with authentic The CHOYA umeshu; and “Red Ume Jelly,” a red umeshu syrup combining cranberry and strawberry, both well matched with umeshu. The “Star-Dancing Night Sky Shaved Ice” can also be selected as the dessert for the “Ume-Zukushi Afternoon Tea & High Tea” course, which includes 2.5 hours of all-you-can-drink service featuring more than 100 beverages such as umeshu cocktails and non-alcoholic umeshu cocktails, with last order 30 minutes before the end. The shaved ice is priced at 2,090 yen including tax, with alcoholic and non-alcoholic versions available. A separate cover charge applies. The course is available during the same period, priced at 5,700 yen including tax and cover charge from Sunday to Thursday, and 6,200 yen on Fridays, Saturdays, holidays, and days before holidays. The CHOYA Ginza BAR is located at NOCO 7F, 5-6-5 Ginza, Chuo-ku, Tokyo. Hours are 16:00 to 22:00 on weekdays and 13:00 to 22:00 on weekends and holidays, with last order at 21:30. The venue is entirely non-smoking. CHOYA says it will continue operating under the concept of offering customers “new encounters with ume,” while pursuing new possibilities for ume under its slogan, “Deliver the power of ume.”
