This sake is brewed using 50% polished 'Goriki' rice, a variety native to Tottori Prefecture, in accordance with the 'GI (Geographical Indication)' standards for sake. As interest in GI-certified sake grows, reflecting regional terroir and tradition, our company has been dedicated to maximizing the potential of the 'Goriki' rice. This Junmai Daiginjo is crafted to highlight the unique characteristics of Tottori and the deep umami of the Goriki rice. 'GI Tottori' is a unique designation that requires not only the use of local water but also strictly Tottori-grown rice, alongside traditional small-batch brewing methods and a minimum 20% koji rice ratio.
