BLANC Co., Ltd. (Headquarters: Minato-ku, Tokyo; CEO: Takuya Yamanaka) announces the opening of dinner reservations at SOIL (Soil), a restaurant located within the nature-integrated hotel BLANC YATSUGATAKE (Kitakomi, Yamanashi Prefecture), which grand opened in April 2026. Guests who are not staying at the hotel can now enjoy a course meal centered on local Yatsugatake ingredients, paired with sake from Shichisen, the opening partner and historic sake brewery, and natural wines from Yamanashi Prefecture.

SOIL (within BLANC YATSUGATAKE)

Come to eat, even if you're not staying.

BLANC YATSUGATAKE is a nature-integrated hotel with private open-air hot spring baths in every villa, but the restaurant SOIL is not exclusive to overnight guests. Whether you're a local resident or visiting Tokyo for a day trip, you can enjoy a full-course meal with a reservation made at least three days in advance.

While the Yatsugatake area has many unique dining spots, restaurants offering course meals featuring local organic vegetables, game meat, and natural wines from Yamanashi Prefecture are still limited. SOIL aims to go beyond being just a hotel restaurant and become an open culinary hub for everyone visiting the region.

SOIL Dinner Course

A place where people and land connect, experiencing the stories of food and the craftsmanship of producers.

The name "SOIL" originates from the Indo-European root "sed," meaning "to sit," which evolved into the concept of "place" where humans root and live, and further into "soil," "earth," and "land."

Good soil grows good food. The Southern Alps stretching before your eyes function in harmony with the earth, nurturing a rich ecosystem. SOIL was born as a place to honor the "soil," the origin of this land's bounty, where people can connect with the land, savor food, and feel the stories behind ingredients and the hands that produced them.

Inside SOIL Restaurant

Toast with Yamanashi Natural Wine, Featuring Local Game Meat

Bistronomy (Bistro × Gastronomy) Rooted in the Bounty of Yatsugatake's Nature

At restaurant SOIL, we feature ingredients from Yatsugatake, nurtured by clear air and fertile land, and deliver dishes infused with the producers' passion.

Fresh seasonal organic vegetables, glistening with morning dew. Meat dishes made from fresh game sourced directly from hunters, gently and carefully cooked. We delicately draw out the seasonal aromas and natural flavors of ingredients, crafting them into bistro French cuisine with subtle Japanese touches.

Based on French regional cuisine generously using local Yatsugatake ingredients, we offer approachable yet refined original course meals that incorporate Japanese cooking techniques, dashi, and seasonings.

We offer an Anniversary Plate to make birthdays, anniversaries, and other special moments even more memorable. We can add a message to the dessert plate or take orders for a whole cake (4-inch, ¥5,500 including tax).

The cake is a specialty creation by a renowned patissier who won second place at an international competition in France. Each cake is carefully crafted to preserve the delicate flavors of the ingredients, offering a luxurious taste worthy of a special day.
