Billion Foods Co., Ltd. (Headquarters: Shinagawa-ku, Tokyo; Representative: Yuto Nakamura) has decided to extend the Sushi Kagerou project into late June. Young staff members are renting part of Roppongi Sushi Muku to offer the authentic “Akazu Sushi 15-piece course” for ¥3,000 (tax included ¥3,300), and the response has exceeded expectations.
The program sold out quickly after launch, with near-capacity bookings on weekends and a high number of repeat reservations, receiving strong praise from many customers.
This extension provides more customers the opportunity to experience the project.
What is the Sushi Kagerou Project?
Named after the ephemeral mayfly (kagerou), which appears only for a short time, and likened to the shimmering heat haze representing the youthful intensity of the team, Sushi Kagerou is a hands-on project aimed at training young sushi chefs.
More than 18,000 guests have already experienced the program. Supervised by the team behind the authentic Edomae sushi restaurant “Sushi Asahi,” the project offers a true Edomae style using akazu rice and seasonally selected fish purchased directly at Toyosu market—at a price that anyone can enjoy casually.
In April we delivered the same concept with prices reduced further compared to past events. Staff personally purchase fish early in the morning at Toyosu market, allowing us to keep costs down while achieving the highest quality of ingredients to date.

About Roppongi Sushi Muku / Shirogin
Since opening on November 16, 2022, this Edomae sushi restaurant has delighted sushi lovers from Japan and abroad.
Positioned as a place where “good Japanese things can be enjoyed by anyone at any time,” the restaurant offers 20-item courses for under ¥10,000 despite its ultra-convenient location within a minute’s walk of Roppongi Station on some exits.
Therefore, this restaurant’s courses are also known for excellent value and come highly recommended.
They also focus on sake, offering SAKE pairing plans to match the sushi courses.
The space is large, and as an interesting approach the operation is split into two venues with different interiors.
