This limited edition design, which has been highly praised by customers as "summery" and "cute," is back again this year. The special packaging is designed to allow visitors to Kyoto in July to fully enjoy the atmosphere of Kyoto in summer and the lingering memories of their trip even after they return home. It is perfect as a souvenir or as a travel companion. Sales will end when the planned quantity is reached for each product.

2. Using Uji Matcha from Contract Farmers: The Secret to Kyo Baum's Moist and Fluffy Texture

"Kyo Baum" is a Kyoto-originating baumkuchen, launched in 2008 with the desire to "create a new Western-style confection unique to Kyoto," featuring a vibrant three-layer combination of Uji matcha and soy milk. Since its launch, it has grown into a popular Kyoto souvenir purchased by many.

Reflecting our desire to "create products using ingredients with traceable origins," we use Uji matcha grown by contract farmers. It is layered with matcha dough made by blending Uji matcha with sencha, and dough made with Kyoto-produced soy milk prepared with Kyoto's underground water.

3. Celebrating 60 Years Since Its Debut: Otabe's Flavor, Emphasizing Carefully Selected Ingredients and Homemade Production

"Otabe" with sweet bean paste, a fresh yatsuhashi confection, was born in 1966 during Japan's period of high economic growth as a new creative confection by wrapping sweet bean paste in fresh yatsuhashi dough. At the time, yatsuhashi generally referred to baked goods made from fragrant rice flour dough. "We wanted to utilize the fresh dough, which is delicious on its own, to create a new Kyoto specialty confection" - this desire led to the creation of "Otabe." This year marks its 60th anniversary. While cherishing and preserving Kyoto's traditions, our commitment to ingredients for the sake of our customers' smiles remains the origin of our confectionery making.

"Chewy Texture" from In-house Milling

At the Wakasa Factory in Fukui Prefecture, rice is milled and ground only as needed, then transported daily to the Kyoto Factory where Otabe is produced, ensuring it is used in its freshly ground state. By using rice flour with high moisture content, unique to in-house production, we create a plump, chewy, and firm dough that fully brings out the rich flavor of the rice.

Homemade Bean Paste Protected by "An Meister"

The light and sweet bean paste is cooked at the Wakasa Factory and delivered to the Kyoto Factory where Otabe is produced. The adzuki beans, carefully cultivated by contract farmers in Tokachi, Hokkaido, are meticulously cooked in small batches to avoid crushing the beans. The ability to adjust the cooking method according to the unique characteristics of the beans from each farm is only possible with homemade bean paste developed in collaboration with contract farmers.

At the Wakasa Factory, "An Meister" (※) continues to protect the deliciousness of Otabe.

※ An Meister: An internal certification system that evaluates the knowledge and skills required for bean paste production to continue making even more delicious Otabe by leveraging the characteristics of the raw materials.

Water from "Urivali no Taki," one of Japan's Top 100 Famous Waters

The fresh yatsuhashi for Otabe is cooked using natural water from "Urivali no Taki" for ingredients such as rice flour and sugar.

This natural water, rich in minerals, is tasteless and odorless, with fine water particles that have good permeability to starch, allowing it to enhance the flavors of nikkei, matcha, and rice.

The filtered and sterilized natural water is transported to the Kyoto Factory in tanks for use.
