“JOEÅ Organic Sparkling Chardonnay Prestige” to be Released in April

Enoteca Co., Ltd. (Headquarters: Minato-ku, Tokyo; President: Shinji Hori) will begin nationwide sales in April of "JOEÅ Organic Sparkling Chardonnay Prestige," a 0.0% alcohol (*2) wine-style beverage (*1) developed in collaboration with Chavin, a French winery in the wine-style beverage market.

"JOEÅ Organic Sparkling Chardonnay Prestige" is the prestige cuvée of the "JOEÅ Organic Sparkling Chardonnay" released in 2021. Aiming for the fresh and elegant style characteristic of Champagne, it was born after three years of joint development with Enoteca, building upon the winemaking expertise Chavin has cultivated over more than 15 years.

The raw materials consist of organic Chardonnay grapes grown in 15 vineyard plots across southern France, situated at altitudes between 50 and 400 meters and facing various directions. The harvested grapes are vinified and aged plot by plot. Applying the traditional Champagne technique of assemblage (*3), 15 different base wines are blended. Furthermore, 6 to 9 months of lees aging and partial aging in French oak barrels add depth and complexity to the flavor profile.

In terms of production, unlike the non-fermented method used for "JOEÅ Organic Sparkling Chardonnay" which does not use fermented raw materials, this product employs a dealcoholization process where the wine is first fully fermented and then the alcohol is separated, maximizing the original aroma and flavor of the wine. No artificial flavorings are added; all aromas—including white flowers, citrus, yellow peach, apple, brioche, and toast—are derived entirely from the wine itself. The mouthfeel is smooth, and the delicate effervescence is impressive. Flavors of ripe apple and brioche linger, leading to a dry, crisp finish.
