Chef's Thoughts: "Hospitality" Where History and Modernity Intersect
"In creating this menu, I let my imagination run wild, thinking, 'If Hideyoshi and Hidenaga were alive today and dining at this Garden Restaurant Tokugawaen, what kind of dishes would surprise and delight them?' By sublimating episodes from their lives recorded in history and ingredients associated with the Toyotomi brothers using modern French techniques, I aimed to create a dish that allows you to feel their bond across time and space." (Koyanagi, Head Chef, Garden Restaurant Tokugawaen)
Symbolic Menu Items Adorning the Course (Examples)
【Premier】Sea Bream, Moriguchi-zuke, Caviar
A dish combining sea bream, which Hideyoshi loved, and "Moriguchi-zuke," a Nagoya specialty said to have been named by Hideyoshi. The artistic presentation, reminiscent of Osaka Castle, heralds the dawn of the Toyotomi golden age.
【Chaud】The Compassion of Yamato ~ Turnip, Yuba, Consommé, Truffle ~
An homage to the younger brother, Hidenaga, who supported his brother and focused on agricultural administration. Using "yuba" (tofu skin), which has ties to his time governing Yamato Province, the dish is enveloped in the aroma of modern consommé and truffle. It is finished with yuba chips sprinkled with Hatcho miso powder, expressing Hidenaga's sincere and warm personality.
