About Takaki Bakery's Stone Oven Bread Series
In 2005, driven by the desire to "create traditional European bread in a factory," we introduced a stone oven for the first time in a Japanese bread factory. We returned to the origins of bread making, challenging ourselves to achieve authentic European bread making and the craftsmanship of bakers. Our stone oven bread, baked crispy on the outside and moist and chewy on the inside, has been loved by many customers.
Challenging the Conventional Wisdom
In 2005, Takaki Bakery introduced a stone oven for the first time in a Japanese bread factory. In the wholesale industry, where mass production for efficiency was the norm, we challenged the conventional wisdom by pursuing authentic European bread making. Starting from scratch, we built everything from understanding the characteristics of the stone oven to manufacturing methods, machine settings, human resource development, and sales style.
Returning to the Origin of Bread Making
Since its birth in 2005, Takaki Bakery's stone oven bread has continuously pursued "what is the origin of bread making."
Use high-quality ingredients and the simplest possible recipe.
Incorporate plenty of moisture and ferment slowly and carefully.
Bake thoroughly with the abundant heat of the stone oven.
