This year, newly joined pastry chef Yasuhide Sawada, along with Takashi Naito, will combine the sensibilities of two pastry chefs with strawberries grown in Chitose by "Hana-cha" and "Ogawa Farm," allowing guests to enjoy a wide variety of seasonal flavors.

Chef Naito's specialty is the traditional French confection "Vacherin." This dish features light meringue baked with strawberry powder, layered with strawberry mousse, and accented with white sesame texture and raspberry sauce. Meanwhile, Chef Sawada offers "Tourbillon de Fraise," a spiral strawberry roll cake made with soft roll dough using Hokkaido-produced wheat and Chitose eggs, filled with Hokkaido fresh cream and strawberry mousse. It's finished with a gentle flavor that brings out the best of the ingredients.

In addition to these, the buffet will feature a dazzling array of sweets such as "Mon Cœur" (strawberry and raspberry mousse with shiso jelly), mini parfaits, tiramisu, and crepes. Furthermore, dishes that bring out new charms of strawberries will also be available for dining, such as French toast with strawberries and prosciutto, and a dish of tender stewed pork with a sweet and sour strawberry and honey gastrique sauce.

For the dinner buffet only, special items include Roast Beef prepared by "Haskap The Garden" head chef Yamamoto, strawberry and venison bolognese pizza, and a non-alcoholic strawberry sparkling welcome drink. These offerings create a truly special experience.

The diverse menu extensively uses Chitose-grown strawberries carefully cultivated by "Hana-cha" and "Ogawa Farm." This project expresses the producers' passion and the strawberries' appeal in each dish.
