Mercure Sapporo (located in Chuo-ku, Sapporo; General Manager: Christopher Kasel) has launched 'Live Services' for its breakfast and lunch buffets at the in-house restaurant 'Bordeaux' starting April 2026.

Through this service, chefs and staff finish dishes right in front of the guests, providing not only the deliciousness of 'freshly made' food but also a memorable dining experience through communication with the staff.

### Background of Introducing Live Services In recent years, dining has shifted from a mere act of eating to a valued 'experience.' While the hotel has always provided menus utilizing Hokkaido ingredients, the introduction of live services creates time for guests to enjoy the cooking process, aromas, and sounds through their five senses, while feeling the 'human warmth' through interaction with the staff.

### Breakfast Live Service At the breakfast buffet, staff finish warm soups using Hokkaido ingredients at the counter and serve them on the spot. The soups include 'Hokkaido Onion Soup' using Kitami onions (the largest producer in Japan), 'Hokkaido Scallop Soup,' and 'Hokkaido Potato Butter Soup.' All three varieties, served on a daily rotation, are popular products from Greens Kitami, a food manufacturer based in Kitami City. Guests can enjoy conversations with staff while watching the cooking process up close.

### Lunch Live Service During the lunch buffet, staff circulate among tables with a wagon service to provide desserts. From April to June, 'Catalana' is featured. Staff will use a blowtorch to caramelize the surface in front of the guests, creating a sweet and bittersweet aroma and a visually appealing moment perfect for photos.
