Chocolatier/Chef Pâtissier Koichi Midorikawa Started his career as a chef at a hotel in Tokyo before transitioning to a pâtissier at a hotel in Osaka. After gaining experience as a chef pâtissier, he currently serves as the chef pâtissier and chocolatier for the Ai Group, overseeing product development and brand supervision.
He is responsible for developing desserts and wedding cakes for bridal menus, directing patisseries, and planning/supervising original brand products. He is active in a wide range of fields, including producing afternoon tea cafes and collaborating with other facilities.
He has received numerous awards, including the Monde Selection Grand Gold Medal, Japan Food Selection Gold Award, OMOTENASHI Selection Gold Award, and the Good Design Award, and his technical skills and expressive power are highly regarded.
