The business model is being revamped with the aim of allowing more people to easily enjoy the aromatic Nishiwaga-grown soba, nurtured by the temperature difference between day and night. This initiative seeks to enhance the brand power of "Nishiwaga Soba," a local specialty product, and expand the number of visitors.

Nishiwaga Town is known as one of the leading soba-producing areas in the prefecture, where the cool climate and the temperature difference between day and night foster richly aromatic soba. Nishiwaga Sangyo Kosha has been working to promote the Nishiwaga Soba brand by holding events such as the New Soba Festival, Yukimuro Soba Festival, and Kanzarashi Soba Festival.

With this renovation, these efforts will be further developed, and the restaurant will embark on a new start as a specialty shop offering all-you-can-eat ni-hachi soba made with Nishiwaga-grown soba flour and Iwate-grown wheat "Yukichikara."

This dining style, allowing customers to savor the original aroma and texture of Nishiwaga soba without worrying about time, is also expected to become a new tourist attraction that allows visitors to experience the charm of the region.

In Nishiwaga Town, we have promoted soba cultivation utilizing fallow fields, taking advantage of the cool climate and the temperature difference between day and night.
