Prior to the opening, a preview for the media was held on June 30 (Tue.). On the day, Juroku-dai head, Tamura Hanjuro, spoke about his aspirations for the facility's opening and future prospects, and provided explanations of the various details. Media representatives also had the opportunity to sample course menus available at the restaurant.

Through this facility, we aim not only to preserve the history of the traditional "Kasen" sake but also to propose new ways of enjoying sake that blend into modern lifestyles.

At the media preview held on June 30 (Tue.), Juroku-dai Tamura Hanjuro spoke about "&KASEN," his thoughts on the opening, and future prospects.

The head stated, "In our over 200 years of history, the environment surrounding sake has changed considerably. I believe the role required of sake breweries is also changing amidst drastic environmental shifts, including the recent population decline in Japan, changes in lifestyles, and the increase in inbound tourists. Until now, we have diligently adhered to our family motto of 'Brew with care, sell with care,' but from now on, it is necessary to 'convey the culture and stories behind it with care.' The name of the new facility, '&KASEN,' embodies the desire to connect people with people, and people with new discoveries, through the meticulously crafted architecture, garden, food, and service, using '&' to bring them together and realize them alongside Kasen. While building upon the spirit of our brewers passed down through generations, we want to create new value that leads to the future and develop this place as a hub for disseminating the new charm of sake unique to this location."

Restaurant to Enjoy Luxurious Pairings of Traditional Sake and Seasonal Ingredients, Unique to a Sake Brewery

A new restaurant has been born with the concept of "fusion of sake brewery and food," proposing a new dining experience where tradition and innovation harmonize. Centered around the meticulous brewing process using rice, sake lees, and brewing water, the restaurant offers pairing lunches and dinners where guests can savor the diverse charms of sake alongside dishes that combine these elements with seasonal ingredients. From appetizers to cold dishes, main courses, and desserts, sake is carefully selected to complement each dish. Guests can enjoy the expanded flavors through differences in temperature and style, including sake soda, chilled sake, hot sake, and &KASEN original sake.

The dinner course (11,000 yen) begins with an appetizer of seasonal vegetables prepared with brewing water and dashi, followed by exquisite dishes that deepen in flavor with sake, such as sashimi of fresh fish enjoyed with Kasen's irizake. The course includes teppanyaki of brand Kuroge Wagyu beef, seasonal earthenware pot rice cooked with brewing water, and sake lees cheesecake supervised by Chef Emori of patisserie "MAISON GIVRÉE," allowing guests to fully experience the appeal of sake.

The lunch course (5,500 yen) offers a condensed short course of the dinner's highlights. Guests can enjoy a more casual yet profound pairing of sake and food, unique to a sake brewery.

SAKE-Bar Proposing New Sake Styles with Sake Cocktails and Appetizers Supervised by a Renowned Establishment

The SAKE-Bar is a space where you can casually experience new ways to enjoy sake. The sake cocktails and appetizers are supervised by Naoto Ohno, the owner of the popular restaurant "Shutei Zorome" in Monzen-Nakacho, Tokyo. The menu, which draws out the multifaceted charm of sake, proposes new styles of sake.

The menu lineup includes the "Josen Martini," which uses Josen Regular Kasen instead of vermouth for a sophisticated taste; the "Shirokikyu Kaikan Fizz," which utilizes the acidity of white koji and adds sweetness, making it delicious even for those who are not sake enthusiasts; and the "Tokyo Wajo Mojito," a refreshing cocktail made with Special Junmai sake, Tokyo Wajo, and mint.

In addition, three types of cocktails using the &KASEN original sake, created for the facility's opening, are also available: "Yawaguchi Tonic," "Kijoshu Highball," and "Kijoshu Houjicha Wari." These cocktails offer a balance of drinkability and individuality, with distinct flavors.

For appetizers to pair with the cocktails, we offer "Eihire" (dried stingray fin) with condensed umami, served with three types of mayonnaise. "Prosciutto and Fruit Mascarpone," popular among women, has also been added to the lineup. Other new appetizers are planned for sequential release. The lineup, carefully considered for its compatibility with sake, aims to deliver a richer taste experience.

Shop Offering Everything from Limited Edition Seasonal Products to Sake Cups and Sweets

The shop offers a wide range of items to help you enjoy sake culture in your daily life. It is a space where you can casually stop by for gifts, souvenirs, or travel memories, offering a diverse selection of products. The interior design also features original fixtures made from Tamagawa cypress wood, utilizing the local characteristics of Fussa.

The shop features Tamura Shuzojo's "Kasen EDO" and "Kasen TOKYO," as well as the newly developed "&KASEN" series of sake. In addition, we offer original sake cups and two types of glasses selected from Kimura Glass Co., Ltd., designed to enhance the flavor and aroma of sake. We propose new ways to enjoy sake, such as the changes in taste depending on the sake cup.

The food lineup is also focused on pairing with sake. We offer products from sake snack brands such as "Smoked BALPAL" and "Hotarunohikari." From "Smoked BALPAL," we have selected products that enhance the umami of sake, such as "Gouda Cheese Kazunoko" and "Mascarpone Iburigakko," characterized by their mellow richness and smoky aroma. From "Hotarunohikari," we offer an &KASEN limited pairing box, including "Gamo Duck Jerky." The head himself selected appetizers that pair well with Tamura Shuzojo's sake.

Furthermore, we offer sake lees gelato created by Hiroyuki Emori, owner chef of patisserie "MAISON GIVRÉE." In addition to two types made with sake lees from Tamura Shuzojo's signature brands "Kasen" and Daiginjo, we also offer rice milk gelato and seasonal flavors. Other items include "Sake Lees Powder," which allows you to easily incorporate sake culture into your home, and the "&KASEN Original Tote Bag," which is easy to use for everyday purposes. "&KASEN" Architectural Design Contrasting with the Historic Sake Brewery

The architecture of "&KASEN" is designed with a modern appearance featuring a twisted roof, black walls, and large glass surfaces, in contrast to the 200-year-old sake brewery. A symbolic element is the shape of the roof, which opens widely towards the entrance.

This embodies the theme of "Opening 200 years of tradition to the town" in the form of the architecture. The path leading from the brewery gate seamlessly connects to the new facility's entrance flow, expressing the philosophy of inheriting history and tradition into this new space. Integrated with the architecture is a modern and conceptual garden inspired by the Tamagawa River.

The design was a joint effort by Tetsuo Yamaji Architects and Dentsu Live, with the garden designed by ryokuensha.
