While domestic soy sauce production and sales have shrunk to half of their peak, Yuasa Soy Sauce Co., Ltd., a long-established company in Yuasa, Wakayama, updated its highest-ever sales record (309 million yen) in fiscal year 2024. The growth is driven by the high value-added nature of wooden barrel brewing, annual brewery tours and experiences attracting 100,000 visitors, and the development of local soy sauce brewing and restaurant operations in Bordeaux, France. This initiative marks a significant step for the 800-year history of soy sauce brewing to finally reach space, pioneering new frontiers for traditional Japanese craftsmanship.
