Choosing not to use animal ingredients is not a restriction. Listening closely to what plants and grains have to say when they are given the leading role—in Kyoto, where Buddhist contemplation and the tradition of Shojin Ryori (vegetarian cuisine) breathe, it is a return to the essence.
We will continue to search for the true, rather than the new.
About Vegan Ramen UZU Kyoto
Vegan Ramen UZU Kyoto opened in Gosho Minami, Kyoto in 2020. The art collective teamLab's artwork "Reversible Rotation - Black in White" is exhibited on the wall, and black polished tables are arranged to surround the work. Guests can eat vegan food while being enveloped by the artwork reflected not only on the walls but also on the tables. We created it hoping it would be a space where one can face eating, and furthermore, living (life).
At Vegan Ramen UZU Kyoto, we offer the "UZU Signature Course", where everything from welcome drinks to desserts is composed of vegan food.
The ramen soup is made by adding vegetables to Rausu kelp and domestic shiitake mushrooms, slowly cold-brewing for 12 hours. The noodles are made using wheat flour from Hokkaido and pesticide-free whole wheat flour from Aya Town, Miyazaki Prefecture.
Furthermore, we offer a menu aiming for zero food waste, such as "Nuts and Miso Cheese and Yatsuhashi" layered with 10 different ingredients, and "Hand-rolled Sushi" accented with tsukudani (food boiled in soy sauce) of leftover soup shiitake mushrooms, fresh Japanese pepper, and perilla, paired with red vinegar sushi rice.
