Highly Exclusive Nakameguro Restaurant 'quinto' to Open New Ginza Location in May 2026, Adding Charcoal Grilling and Accepting General Reservations

Quinto, an innovative-fusion restaurant in Nakameguro, Tokyo, known for being notoriously difficult to book, will expand to Ginza and open a new location, 'ginza quinto,' in May 2026. The restaurant is operated by Sfida Fabbrica Co., Ltd.

The new establishment, led by Chef Kozo Imai, will incorporate charcoal grilling into the signature 'pairing two core ingredients' style honed at the Nakameguro restaurant. The aim is to use the aroma and power of charcoal fire to enhance the ingredients' character and add a new dimension to the cuisine.

Opened in May 2023 in a residential area of Nakameguro, Tokyo, quinto is a sister restaurant supervised by Chef Hideaki Kawashima of the famed French restaurant 'Bon.nu' and the exclusive, members-only 'Treis.' It operates on a referral-only, reservation-only basis with just eight counter seats, centered on the concept of 'pairing two select ingredients to bring out their individual characteristics.' Its omakase course, which combines the excitement of live cooking with wine pairings, has gained high acclaim among gourmands.

Chef Kozo Imai is a culinary protege of Rokusaburo Michiba, the renowned 'Iron Chef' of Japanese cuisine. He trained for six years under Shinkyo Nakamura, a direct disciple of Michiba. With a foundation in Japanese cuisine, Imai integrates knowledge from diverse genres, including Japanese, Italian, and Korean, guided by a philosophy of 'utilizing the original flavors of ingredients and combining them to add breadth and depth to the cuisine.'

'Quinto' in Nakameguro was a hideaway restaurant that gained its reputation purely through word-of-mouth. The expansion to Ginza is positioned as a challenge to present the culmination of its work on a larger stage.
