The theme this time is 'Tracing the Beginnings of Tsuta'.
The limited ramen to be served is 'Kore ga Genten' (This is the Origin).
This bowl is a special menu item created when Yuki Onishi participated in the RAMEN STOCK 1st-anniversary festival, born out of respect for 'Nanae no Aji no Mise Mejiro', his training ground and the very origin of Tsuta.
It is a bowl that re-examines the flavors and spirit from when Tsuta first began its journey, reproduced as faithfully as possible.
'Kore ga Genten' is a special menu that has not appeared even once since that initial event.
To coincide with this birthday festival, it will be revived and served for two days only.

About the Limited Ramen 'Kore ga Genten'
Rather than recreating it anew, we want to deliver the Tsuta of that time exactly as it was, by facing the flavors of that era and tracing each ingredient, production method, and blending ratio.
A soup and hand-massaged noodles built upon a base of Hinaiidori chicken and TOKYO X pork, layered with the umami of dried foods, vegetables, and seafood.
And the tare (sauce) that supported the beginning of Tsuta.
This bowl is the origin of the current Tsuta, the start of everything.
Where was Tsuta born, what has it accumulated, and how has it connected to the present?
To understand the Tsuta of today. Please enjoy this bowl of origins.
Founder Yuki Onishi
Tracing the Beginnings of Tsuta
Japanese Soba Noodles Tsuta was founded on January 26, 2012, in Sugamo, Tokyo.
In 2016, it became the world's first ramen shop to be awarded one Michelin star in the Michelin Guide Tokyo.
Founder Yuki Onishi was an artisan who continuously pursued the possibilities of ramen by crossing global ingredients, aromas, and techniques, all centered around Japan's dashi culture.
His creativity, artisan spirit, deep affection for his colleagues, and strong desire to bring joy to people undoubtedly live on in the current Tsuta.
We believe in the power that a single bowl of ramen possesses.
That an aroma can move the heart. That dashi can evoke memories. That steam can bring comfort.
That the time spent eating with someone can bring happiness. That a single bowl of ramen can make a person smile.
Since its founding, what Tsuta has consistently pursued is not trends or buzz, but simply a 'more delicious bowl'.
Dashi, tare, noodles, aroma, temperature, lingering finish.
While facing all of these, we continue to believe in the infinite possibilities of ramen.
To feel excitement, anticipation, surprise, and a slight warmth in the heart.
We continue to pursue such a bowl.
Crossing over the border
Tsuta's theme is 'Crossing over the border'.
Crossing the borders of ramen.
Crossing the borders of food.
Crossing the borders of culture.
However, this does not mean moving away from ramen.
Rather, it means 'believing endlessly in the possibilities of ramen'.
Moving forward, centered around ramen, Tsuta will continue to expand its value in various forms, including UMAMI, gastronomy, health, aesthetics, aroma, gifts, and spatial experience.
All to deliver a 'bowl that moves the heart'.
At this birthday festival, we will express the origin of Tsuta created by Yuki Onishi with our current techniques and passion.
We hope these two days will allow you to reflect on Onishi's journey and feel the future of Tsuta.
