"Wow, this is delicious!" Even our staff couldn't help but voice their amazement at its perfection!

What makes this cake so amazing is that it completely encapsulates one whole Valencia orange, "skin and all."

While typical orange sweets often only use "juice" or "puree," this cake boasts a "fruit itself" design where you can taste the "whole" fruit—flesh, juice, and even the aroma of the skin. We crafted the main bavarois and jelly using juice squeezed completely from one single orange. Furthermore, we have hidden a bitter sauce inside that strongly brings out the bittersweetness of the peel.

The difference between a Valencia orange and other oranges is the golden balance of acidity and sweetness, plus an overwhelming amount of juice! The "juiciness and citrus feel" when completed as a Western pastry is simply on another level.

Even though it's a cake, it has a fruity feel as if you are biting into the actual fruit! It is a perfection that elevates the deliciousness of a Valencia orange into a cake masterpiece.

[① Luxuriously hollowing out a whole orange] First, we boldly hollow out the main ingredient, a whole Valencia orange. The amount of fresh juice that overflows at this moment is incredible! This fresh juice becomes the lifeblood of all the parts. [② Aromatic almond sponge and rich bavarois] The base is a special sponge that fully utilizes the flavor of almonds. On top of that is a Valencia orange bavarois mixed with plenty of freshly squeezed juice. Unlike mousse, you won't be able to resist its "dense" texture packed tightly with umami.

[③ Overflowing juiciness! Melting jelly] Layered next is a smooth-melting orange jelly. The refreshing sensation combines with the richness of the dense bavarois to create the perfect pairing. This juiciness that comes after the rich layer cleanses your palate, making you eagerly anticipate the next bite. [④ A rich accent and a secret trick to tighten the flavor] Here, we add white chocolate crunch. The milky richness of the white chocolate gives depth to the entire cake, while the crunchy texture serves as the best accent. Furthermore, a super-rich bitter sauce that strongly utilizes the bitterness of the peel sharply tightens the overall flavor.

[⑤ A vibrant finish! Co-starring pistachios and bavarois] The top is decorated with brightly colored pistachios and our proud orange bavarois. The roasted aroma of the pistachios enhances the gorgeousness of the orange, creating a finish that excites the heart and pleases the five senses the moment you scoop it with a spoon. This time, instead of a light mousse containing a lot of air, we intentionally chose a dense, firm-textured "bavarois." We didn't make it uniformly sweet, but added a bitter depth, condensing the whole umami of the orange as part of our commitment. It is crafted into a dense and rich eating experience, as if the vitality of the orange is rushing towards you.
