Centered around respect for prefectural ingredients, we will introduce a new food menu inspired by the essence of Asia, and also deliver a newly created signature cocktail lineup that combines materials unique to Okinawa with spirits from around the world. It will evolve into a space where you can deeply experience NÜCHI's music, food, and alcohol starting from dinner time.

From the place where Okinawa's land and creators' work intersect.

NÜCHI's food is born from the place where Okinawan ingredients and producers' work intersect. "TESIO" at Koza Gate 2, "Cheese Shop" in Naha, and the grocery "HINETTERY" inside TESIO — items carefully made at each of these places were reconstructed within the context of the bar NÜCHI. Based on ingredients nurtured by Okinawa's land, such as prefectural wagyu beef jerky, kuruma prawn ajillo, and medicinal hummus kneaded with fuchiba (mugwort), we have layered Asian cooking techniques and the essence of fermentation and aging. Similarly for cocktails, we have completely updated our signature lineup by combining materials unique to Okinawa, such as awamori, habu sake, long pepper (hihatsumodoki), and inamuduchi miso, with global spirits. Even within the glass, the memories and playfulness of this island reside. NÜCHI aims to remain a place where cocktails, music, and the night brought by food each add another layer of depth.

Homemade LOCO Beeeef Jerkeeë!
Prefectural wagyu beef is carefully transformed into jerky over time. A highly appealing dish with concentrated umami that spreads the more you chew. Mustard with cacao nibs adds a light accent.

HINETTERY's White Truffle Butternut
We carefully tossed nuts with white truffle butter from the grocery store "HINETTERY" located inside TESIO. An addictive taste that you won't be able to stop eating once you start.

Fuchiba and Goji Berry Medicinal Hummus
Fuchiba (mugwort), an herb representative of Okinawa, is kneaded into hummus, known as a superfood. Baguette refills are also available.

John's "Miracle" 3 Cheese Platter
We offer 3 types of cheese carefully selected by John from the "Cheese Shop" in Naha City, Okinawa. We highly recommend pairing them with awamori or Japanese sake.

NÜCHI's Thick-Cut Katsu Sando
Speaking of finishing off at a bar, it's a katsu sandwich. A luxurious dish fitting for the end of the night, made with thick-cut prefectural pork.

Chunky Shumai with Pineapple Pork and Shrimp
Shumai luxuriously wrapped with roughly chopped shrimp and pork raised on pineapples. The deep richness of Chinese soy sauce brings out the sweetness of the ingredients.

TESIO Sausage Assortment
We offer an assortment of special sausages from "TESIO" located at Koza Gate 2. Please ask the staff for the day's lineup.

Prefectural Kuruma Prawn Ajillo
Kuruma prawns from Okinawa Prefecture served as ajillo. You can also enjoy the oil infused with the umami of the prawns together with a baguette.

Adult Cheesecake — Roquefort Cheese and Honeycomb
A blue cheese cheesecake. While having a slightly mature taste, it is finished in an easy-to-eat size. It also pairs perfectly with wine.

Awamori, habu sake, long pepper, inamuduchi miso — centering around materials unique to Okinawa, we are introducing 12 signature cocktails that cross them with global spirits like mezcal, gin, and pisco. From spicy to tropical and dessert types, different memories of Okinawa reside in each glass. We have also put the ingredients and playfulness of this island into the glass.

Revamped Signature Cocktails

Pipachi
A refreshing and unique drink where the depth of spices quietly spreads. The botanicals of the gin are layered with the subtle spiciness of the long pepper and the fragrance of cardamom and fennel, finished lightly with soda. The nigana garnish tightens the lingering bitterness and aroma.

Ramune
A Japanese-style sparkling cocktail that makes you feel somewhat nostalgic. The soft umami of awamori overlaps with the tingling stimulation of sansho pepper and the refreshing acidity of green plum, bouncing lightly with soda. The visual, like an ice confection, represents playfulness.
