Walking down the alley and opening the door reveals a hideaway space with only 8 counter seats surrounding a firewood fire. We offer only an omakase (chef's choice) course, utilizing Kyoto local chicken from Fukuchiyama, Nanatani duck from Kameoka, and Kyoto vegetables to create exquisite dishes that reflect the changing seasons. Under the creed of 'baking through,' derived from Executive Chef Akiyama's years of experience, we utilize both charcoal and firewood to maximize the natural umami of the ingredients.

Executive Chef Tatsuyuki Akiyama
Born in Osaka in 1980. He was involved in the launch of Wabiya Korekido in 2002 and has honed his skills for over 20 years. He researched charcoal grilling techniques almost entirely self-taught through interactions with numerous chefs in Kyoto, leading the Wabiya Korekido main store to popularity. Fascinated by the firewood flames he encountered during training in Spain, he opened wabiya in 2023 to open up a new frontier in yakitori. He stands at the grill every day, sincerely facing chicken, vegetables, charcoal, and firewood.

To commemorate the listing, we will release an original wabiya craft beer (*) in collaboration with ASOBI BEER, a craft beer brand from Yosano-cho, Kyoto. We aimed for a rich and solid mouthfeel designed to pair well with yakitori. By combining original Japanese black tea 'Kyoto Black Tea' with early-harvest green lemons from Kyoto (Kyo Lemon) and fragrant olive (kinmokusei), it achieves a taste similar to orange wine that enhances the flavor of the ingredients. A rich aroma rises when poured into a wine glass. This is an original craft beer that colors a 'special day' in wabiya's unique style.

The famous 'Stone-Roasted Oyakodon,' available exclusively during lunch at Wabiya Korekido, has evolved to be even more delicious starting April 22.
We generously use three eggs from Kyoto Prefecture, which possess an excellent balance of richness and umami, over fragrantly charcoal-grilled chicken thighs. By finishing it in a piping hot stone bowl, we draw out a unified flavor and aroma.
In this renewal, we adopted Daisen Herb Chicken as the main ingredient and revised the cooking method to elevate it to a more elastic texture. Furthermore, we changed the eggs to 'Nokou,' characterized by a rich flavor from Kyotango, further enhancing the overall depth and richness. We have also revamped the seasonal soup and pickles enjoyed alongside the Oyakodon, delivering seasonal flavors. Please enjoy our popular Oyakodon, which has been elevated with an uncompromising approach by revising all ingredients, techniques, and hospitality.
