A farmer in Tokachi, Hokkaido. He produces special May Queen potatoes that have overwintered in a snow-aged cellar, with many top chefs as fans. Mr. Inoue's specialty is "snow-aged ripening." May Queen potatoes, harvested after accumulating sufficient starch, are stored in a snow-aged cellar utilizing natural snow. When May Queen potatoes are cooled to near 0°C in the snow-aged cellar, the starch converts to sugar, and they are protected from freezing. This transformation makes them sweet and "sweet-ripened." Furthermore, as the snow gradually melts, a moderate humidity is maintained, protecting the May Queen potatoes from drying out. Through such research-based methods, high-quality, special snow-aged sweet May Queen potatoes are completed.
