In Japan, tequila may have a strong image of being drunk as a shot. However, in recent years, various ways of enjoying it, such as mixing it with soda, in cocktails, or straight, are spreading. Tequila is a distilled spirit whose aroma and taste change with aging, and in some overseas restaurants, it is enjoyed along with the flow of the meal. This time, we have prepared that style as a course.

Don Julio Tequila Cocktail

Our restaurant has long had Victor Vasquez, a former chef at the Embassy of Mexico, and in December 2025, Samuel Diaz, formerly of the two-Michelin-starred restaurant 'Pujol' in Mexico City, joined us. With this two-chef system, we have prepared this special course.

The course is structured to express Mexican cuisine in a full-course style, starting with appetizers like ceviche and tostadas, followed by dishes using masa (corn), a main dish with mole, and dessert. By enjoying the entire flow from appetizers to dessert, you can experience Mexican cuisine as a course rather than just individual dishes.

This course was made possible with the cooperation of Don Julio. In addition to enjoying the different tastes of tequila due to aging, we also plan to offer cocktails made with tequila. We have also prepared wines that complement the dishes, creating a course where you can enjoy going back and forth between food and drinks.

This is a one-day special course to enjoy the food culture woven by Mexican cuisine and tequila.
